Algunos receptores sensoriales presentes en los animales acu\u00e1ticos son la escucha pasiva, la haptosensencia y el sistema de l\u00edneas laterales. Adem\u00e1s, el h\u00e1bitat en el que suelen vivir, como el mar abierto frente a las aguas costeras, desempe\u00f1a un papel importante. Esta forma de recepci\u00f3n sensorial es sumamente fascinante. Demuestra una de las muchas e inconcebibles adaptaciones evolutivas que han experimentado los mam\u00edferos a lo largo de los millones de a\u00f1os transcurridos desde que se reincorporaron a los medios acu\u00e1ticos. Pues bien, en los animales acu\u00e1ticos es un poco distinto que en los organismos terrestres. En los organismos terrestres, los olores del aire se disuelven en la mucosa que recubre la cavidad nasal y se unen a prote\u00ednas especiales que env\u00edan se\u00f1ales al cerebro a trav\u00e9s del nervio craneal I (NC I). Esto permite oler. Sin embargo, el CN I tambi\u00e9n parece estar activo en respuesta a est\u00edmulos transmitidos por el agua, lo que demuestra que la sensaci\u00f3n olfativa es posible bajo el agua para algunas especies. Dado que el agua es m\u00e1s densa que el aire, puede transportar sustancias qu\u00edmicas m\u00e1s lejos que el aire, lo que permite que los est\u00edmulos qu\u00edmicos (olores) viajen a grandes distancias.<\/p>\n\n\n\n<p>Algunos ejemplos de animales marinos capaces de oler son las marsopas, los misticetos, los peces cartilaginosos y muchos otros organismos que quiz\u00e1 a\u00fan no hayamos descubierto. Sin embargo, los misticetos tienen la particularidad de que s\u00f3lo pueden detectar el olor en el aire, no en el agua. Esto significa que sus sistemas olfativos no son muy \u00fatiles durante las actividades cotidianas, pero deben utilizarlos si desean oler.<\/p>\n\n\n\n<p>Y, por supuesto, los tiburones tienen un sentido del olfato muy agudo, que les permite localizar a sus presas a cientos de metros de distancia. Las sustancias qu\u00edmicas liberadas por los cad\u00e1veres de ballena en descomposici\u00f3n o por la carnada de pescado pueden ser percibidas por los tiburones, lo que les indica que hay comida disponible. As\u00ed que, para decirlo de manera simple, los delfines no pueden oler en la misma capacidad que los peces cartilaginosos pueden oler los olores transmitidos por el agua, pero tienen su propio mecanismo para interpretar estos olores.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-gustation-in-dolphins-how-dolphins-taste\">Gustaci\u00f3n en los delfines: c\u00f3mo saborean los delfines<\/h2>\n\n\n\n<p>Los delfines tienen un tercer sentido qu\u00edmico, el \u00f3rgano vomeronasal, situado en la base de la nariz. Aunque sus conductos se abren detr\u00e1s de los incisivos en la boca, el \u00f3rgano puede sentir est\u00edmulos en el paladar y esencialmente \u201cprobar\u201d estos olores v\u00eda impulsos transmitidos v\u00eda CN V de la cavidad oral al cerebro. Esta percepci\u00f3n se conoce ahora como cuasi-olfacci\u00f3n y puede ofrecer el eslab\u00f3n perdido que los investigadores han estado buscando en la recepci\u00f3n quimiosensorial de los delfines.<\/p>\n\n\n\n<p>Las investigaciones han demostrado que los delfines pueden interpretar (o degustar) sabores agrios, amargos y salados, lo que les permite detectar diversas sustancias qu\u00edmicas en el agua liberadas por sus presas, depredadores o compa\u00f1eros.<br>(como la orina y las heces). Adem\u00e1s, se ha demostrado que los delfines son capaces de discriminar entre diferentes sabores y acercarse a una fuente de alimento preferida, lo que constituye otro ejemplo de \u201cdegustar los olores\u201d. Por el contrario, se trata de un \u00e1rea de investigaci\u00f3n marina muy complicada y no bien comprendida que requiere m\u00e1s investigaci\u00f3n para obtener datos s\u00f3lidos. Lo que s\u00ed sabemos es que donde los delfines carecen de sentidos olfativos, lo compensan con sus sentidos orales.
