Es necesario activar la levadura la noche anterior.<\/p>\n\n\n\n<p>Primero, cuece el boniato en agua. Una vez cocido, h\u00e1galo pur\u00e9 y a\u00f1\u00e1dalo a un bol grande. A\u00f1adir el huevo, el az\u00facar y la levadura previamente diluida en agua tibia, y mezclar a mano. A\u00f1adir la harina hasta conseguir una buena consistencia. T\u00e1palo y d\u00e9jalo crecer toda la noche.<\/p>\n\n\n\n<p>A la ma\u00f1ana siguiente, tamizar la harina en un bol grande y a\u00f1adir el az\u00facar. Hacer un peque\u00f1o hueco en el centro y a\u00f1adir los huevos. Batir hasta obtener una mezcla homog\u00e9nea. Derretir la mantequilla y a\u00f1adirla al bol. A\u00f1ade tambi\u00e9n la mezcla de levadura y empieza a amasar. Debes amasar hasta que veas que se forman burbujas y la masa no se pegue.<\/p>\n\n\n\n<p>Una vez que est\u00e9 bien amasada, pon la masa en un recipiente grande, t\u00e1palo y deja que suba durante unos 15 minutos. Despu\u00e9s, amasa de nuevo durante unos 30 minutos y vuelve a ponerla en el recipiente tapado hasta que haya doblado su tama\u00f1o.<\/p>\n\n\n\n<p>Ahora es el momento de hornear la masa. Divida la bola en diferentes partes, dependiendo del tama\u00f1o que desee (en las Azores, es t\u00edpico encontrar grandes Massas Sovadas de 500 g o incluso 1 kg). Estire y doble las diferentes partes y p\u00f3ngalas sobre un pa\u00f1o espolvoreado con harina. Deje que suban hasta doblar su tama\u00f1o.<\/p>\n\n\n\n<p>Precalienta el horno a 180\u00baC. Cuando est\u00e9n listas para ir al horno, pinc\u00e9lalas con un huevo batido. Deben permanecer en el horno al menos 45 minutos, pero este tiempo puede variar en funci\u00f3n del tama\u00f1o de las bolas.
