Il faut activer la levure la veille au soir.<\/p>\n\n\n\n<p>Tout d'abord, faire cuire la patate douce dans de l'eau. Une fois cuite, la r\u00e9duire en pur\u00e9e et l'ajouter dans un grand bol. Ajouter l'\u0153uf, le sucre et la levure pr\u00e9alablement dilu\u00e9e dans de l'eau ti\u00e8de et m\u00e9langer \u00e0 la main. Ajouter la farine jusqu'\u00e0 obtenir une bonne consistance. Couvrez et laissez pousser toute la nuit.<\/p>\n\n\n\n<p>Le lendemain matin, tamiser la farine dans un grand bol et ajouter le sucre. Faire un petit trou au milieu et ajouter les \u0153ufs. Fouetter jusqu'\u00e0 ce que le m\u00e9lange soit homog\u00e8ne. Faire fondre le beurre et l'ajouter au saladier. Ajouter \u00e9galement le m\u00e9lange de levure et commencer \u00e0 p\u00e9trir. Vous devez p\u00e9trir jusqu'\u00e0 ce que des bulles se forment et que la p\u00e2te ne colle pas.<\/p>\n\n\n\n<p>Une fois la p\u00e2te bien p\u00e9trie, la mettre dans un grand bol, la couvrir et la laisser lever pendant environ 15 minutes. Ensuite, la p\u00e9trir \u00e0 nouveau pendant environ 30 minutes et la remettre dans le r\u00e9cipient couvert jusqu'\u00e0 ce qu'elle ait doubl\u00e9 de volume.<\/p>\n\n\n\n<p>Il est temps de cuire la p\u00e2te. Diviser la boule en plusieurs parties, en fonction de la taille souhait\u00e9e (aux A\u00e7ores, il est courant de trouver des Massas Sovadas de 500 g ou m\u00eame de 1 kg). \u00c9tirer et plier les diff\u00e9rentes parties et les placer sur un torchon saupoudr\u00e9 de farine. Laissez-les lever jusqu'\u00e0 ce qu'elles doublent de volume.<\/p>\n\n\n\n<p>Pr\u00e9chauffer le four \u00e0 180\u00baC. Lorsqu'elles sont pr\u00eates \u00e0 aller au four, badigeonnez-les d'un \u0153uf battu. Elles doivent rester au four pendant au moins 45 minutes, mais ce temps peut varier en fonction de la taille des boules.
